It’s Christmas time and baking is on the agenda. But not just for humans. These horse treats look pretty tasty.

My daughter and I are planning a baking extravaganza leading up to the holidays. Perusing the Internet, I found some very tasty looking horse treats which I think will add to the mix. Here’s the recipe.

1 1/4 c. steel cut oats
3/4 c. molasses
1/2 c. flour
1/2 c. flaxseed
2 tsp. cornstarch
1/4 c. water
Approximately 1/4 c. of shredded apple, pear or carrots.

Mix molasses and oats, until oats are fully coated. Gradually stir in flour, flaxseed, cornstarch and shredded apple/carrot/pear until combined. Add water as needed.

Grease muffin tin well – more than usual, or you will end up chipping horse muffins out of the tin. You can also use a cupcake liner.

Fill muffin tins half full (heaping teaspoon if you’re using a small muffin tin).

Bake at 350 degrees for 15-20 minutes, and err on the short side if you’re using a tiny muffin tin. Watch them closely for the last minutes – they will burn quickly, due to the high sugar content.

Press in peppermint candy, if you wish, then remove from tin immediately. Place them in the fridge to cool and firm up.
